SPICED NUTS
2 tbsp olive oil 1/2 tsp ground ginger 1/2 teaspoon cayenne pepper 2 tbsp maple syrup 2 cups of nuts (I like almonds)
Lightly oil a baking dish and set it aside
Heat the 2 tbsp of olive oil in a non-stick skillet over medium heat.
Add the above spices or whichever combination suits you, stir until fragrant.
Stir in the maple syrup and add the nuts.
Work quickly to prevent sticking and burning, tossing until the colour turns amber and the nuts are coated.
Transfer to the baking dish, sprinkle with sea salt and set aside to cool.
Store in an air tight container.
