BREAKFAST PUDDING: OVERNIGHT OATS


Breakfast is an important meal that provides a great start to our day! When we skip breakfast not only do we feel sluggish physically but we will feel sluggish mentally as well; our body and our mind need to be well nourished in order to function well. Chances are we will be left reaching for something high in sugar come mid-morning to help give us a quick boost.

This recipe is a great way to make a nourishing breakfast the night before so there's no rushing around in the morning, just sit and enjoy! Your body will say "thanks for that" and so will your brain!

1 cup oats

½ cup bulghur

½ cup pot barley

1 tbsp flax seeds

¼ cup chopped dried apricots

¼ cup raisins

2 tsps butter

½ tsp sea salt

¼ tsp nutmeg

1 tbsp cinnamon

4 cups water

Mix everything together in crockpot at bedtime, set on low and enjoy for breakfast.
