GINGERBREAD: IT MAY REMIND YOU OF CHRISTMAS BUT IT'S GREAT ALL YEAR LONG


Gingerbread always reminds me of Christmas but that certainly doesn’t mean these gems are a “Christmas only” treat… they are nice anytime of the year!

¼ cup maple syrup

2/3 cup molasses

1/3 cup olive oil

1 ½ cups soy milk (you can use almond or rice milk in place of soy)

1 ½ cups spelt flour

2/3 cup brown rice flour

¼ tsp baking soda

1 ½ tsps baking powder

1 tbsp. cinnamon

2 tsps. ginger

¼ tsp. ground cloves

2 eggs

Blend maple syrup, molasses, oil, and soy milk (or a substitute of your choice). Sift together dry ingredients. Form a well in the center of the dry ingredients and pour in the wet mixture. Mix in eggs.

Pour into greased 9 inch square pan.

Bake at 375 degree oven for 45 mins. or until firm to the touch.

Serves 8

I am pleased to announce our commitment to Canadian Feed the Children, an organization dedicated to providing support to children and families in Canada as well as internationally in Bolivia, Ethiopia, Ghana and Uganda.

We have committed to donating a portion of our monthly sales to Canadian Feed the Children to help provide children and families in need with such things as increased access to nutritious food and quality education, and community support. Together we are creating a healthier and brighter future for children around the world.
